Banana Pancakes (gluten free, dairy free)


There are different ways to easily and quickly make delicious banana pancakes. I have previously posted a recipes for Banana Chocolate Pancakes. In this post I wanted to give a basic recipe and ideas on how to make variations.

The easiest way to make banana pancakes is to mix a banana and an egg together and fry the batter as pancakes. As simple as that and it’s delicious! If you want, you can stir in a pinch of baking powder to get a little extra fluffiness.

The recipe below has a few more ingredients and resemble  even more regular pancakes. You can vary what you serve them with as you want: different fruits, defrosted or fresh berries, whipped coconut cream or chocolate sauce are some ideas. Sprinkle with cinnamon or cocoa over if you like.

Recipe (serves 2)

4 eggs
1 banana
3-4 tbsp coconut milk or other milk
2 tbsp coconut flour
1/2 tsp baking powder
coconut oil, butter or ghee to fry in

  1. Add all ingredients for the pancakes in a food processor or use a hand mixer.
  2. Run the food processor briefly so that you get a smooth batter.
  3. Fry the pancakes on low heat, about 2-3 minutes on each side.
